Do you like Pork Rinds? Well this recipe is for you then. In a large glass pan, like 13x11. You do not need any oil with this. You will need 1 large bag of plain pork rinds ( NO CARBS this is why I used these) . 1 lb of mild ground sausage, cooked. 2 cups of shredded cheese, what ever you like. With this recipe we added some grated parmasian cheese also, but not necessary. Line the pan with Pork Rinds, Add part of the cheese sprinkled over the top, then add in the crumbled sausage, then the rest of the cheese. ( You could use more cheese if you like) .No other spices needed. Put in a 350 oven till the cheese is melted ( maybe 30 minutes cause all is already cooked). This large pan will make 4 servings, like you see here, would be two servings. If you make servings smaller, you could add a salad with it. Now get some Pace Picante mild sause to serve on the side, to dip this meal in or spoon over top. You could also have sour cream with this, but no necessary. It is good all by itself. You can refridgerate, but when you reheat, the Pork Rinds will get chewy, not all, but some just to let you know. I used to use Dorietos but when I realized they caused me more pain I stopped making this recipe till I discovered Pork Rinds in my effort for Low Carb things. This will cost $10.00 or less depending on the brands of items and how big you get them. Now we used Plain Pork Rinds, but they have BBQ ones and HOT ones, so if you like those, then you can use those also. Next time we make this, we are going to add chopped  black olives. ( Just make sure they are good and dry, like put them on a papertowel to soak up the moisture or it will make your pork rinds soggy, you could serve the chopped black olives on the side)
